全球椰子短缺！椰奶供应受限

在马来西亚吉隆坡经营餐厅的法米·法特一家在今年开斋节遇到特殊困境——由于椰子持续短缺，他们只能为顾客提供平日用量一半的传统美食。“新鲜椰奶供应严重受限，一些招牌菜都不得不减量制作。”这位45岁的餐厅经理无奈表示，节日期间椰奶采购量骤减50%，对餐厅生意造成严重影响。
据美国彭博社26日报道，这场短缺危机正席卷全球椰子产业链。菲律宾、印度尼西亚等椰子主产国接连遭遇极端天气：干旱、热带气旋导致2025年菲律宾椰子产量预计下降20%，其最大种植区的树木已承受两年气候压力。印尼工业部数据显示，当地椰价今年前3个月暴涨150%，当局正考虑实施3-6个月出口禁令。斯里兰卡的椰子批发价同比翻番后，政府已批准进口椰肉缓解短缺。
与此同时，全球椰子需求持续攀升。美国农业部预测，2024-2025年度椰子油库存将创4年新低，当前国际椰油价格较2023年相比，已翻倍至2658美元/吨，达3年峰值。面对供需失衡，各国采取紧急措施。菲律宾正与生产商协商，拟优先保障国内供应。泰国、越南等地被迫限制供应。马来西亚部分商家不得不停业，政府建议用奶油替代椰奶，但民众并不买账。法特称：“椰奶是马来西亚美食的灵魂，替代品会让风味尽失。”
