全球椰子短缺!椰奶供应受限

    在马来西亚吉隆坡经营餐厅的法米·法特一家在今年开斋节遇到特殊困境——由于椰子持续短缺,他们只能为顾客提供平日用量一半的传统美食。“新鲜椰奶供应严重受限,一些招牌菜都不得不减量制作。”这位45岁的餐厅经理无奈表示,节日期间椰奶采购量骤减50%,对餐厅生意造成严重影响。

  据美国彭博社26日报道,这场短缺危机正席卷全球椰子产业链。菲律宾、印度尼西亚等椰子主产国接连遭遇极端天气:干旱、热带气旋导致2025年菲律宾椰子产量预计下降20%,其最大种植区的树木已承受两年气候压力。印尼工业部数据显示,当地椰价今年前3个月暴涨150%,当局正考虑实施3-6个月出口禁令。斯里兰卡的椰子批发价同比翻番后,政府已批准进口椰肉缓解短缺。

  与此同时,全球椰子需求持续攀升。美国农业部预测,2024-2025年度椰子油库存将创4年新低,当前国际椰油价格较2023年相比,已翻倍至2658美元/吨,达3年峰值。面对供需失衡,各国采取紧急措施。菲律宾正与生产商协商,拟优先保障国内供应。泰国、越南等地被迫限制供应。马来西亚部分商家不得不停业,政府建议用奶油替代椰奶,但民众并不买账。法特称:“椰奶是马来西亚美食的灵魂,替代品会让风味尽失。”
